WINES
Our wines are made from hand-picked grapes, harvested fully ripe.
Our winemaking is natural and low intervention: fermentation takes place with natural yeasts, present on the grape skins.
The wines are then matured for one year on fine lees in tanks or foudres (large oak casks holding 2,000 litres or more). The wines remain in this state during the ageing process, which helps to retain their freshness and maintain sulphur levels to a minimum. If necessary, the wine is lightly filtered before bottling, which takes place in early September to make space for the new harvest.
Before release, the wines then mature in bottle for 2 to 4 years in our underground cellars, which maintain a stable temperature and humidity throughout the year.
This slow, meticulous production method gives our wines real ageing potential, along with a complex and diverse range of aromas with a balanced, mineral texture on the palate.
